Mountaintop is classified as a hardneck Purple Stripe garlic. The name “Mountaintop” is used by a few heirloom growers to describe a strain originally collected from a high elevation region, likely in The Caucasus, Eastern Europe or the Pacific Northwest. It’s not a commercial variety and is only preserved through small farms and garlic collectors and it shows up mostly among small specialty growers in North America. It has a strong, complex flavour, excellent cold hardiness and reliable scape production. Mountaintop garlic has 6–9 cloves per medium to large bulb. Intense and spicy, when raw. A deep, rich garlic flavour, sweetens exceptionally well when roasted and is excellent for both raw and cooked dishes. It’s a “chef friendly” garlic with both heat and depth. Good storage (5–7 months).
